Avocado and Cottage cheese cream salad
If you want to try something different from the traditional salads, this is a good choice…. it’s healthy,delicious and very easy to prepare!
• 1 avocado ( or 2 if they are small)
• ¾ cup of cottage cheese
• 1 5-ounce can tuna (preferably packed in olive oil)
• 3 tablespoons of maionese
• 2 tablespoons of sour cream
• Salt and red pepper
Preparation time: 10 minutes
Instructions: Slice the avocado in half, take out the seed and then peel off the skin of both halfs. Put it in a bowl and with a fork smash well,or blend it in a food processor! Drain the tuna and add it to the avocado puree,combine them well with the fork and then add the cottage cheese. Mix these Ingredients until you get a creamy texture, add salt and red pepper as much as you want and at the end,add the maionese and sour cream. Mix again and refrigerate for at least 1 hour before serving!
This creamy salad is suitable for low carb diets and it’s excellent if combined with low carb bagels!
Turkey with broccoli and mushrooms
A simple, fast and healthy meal that is perfect family dinner ready in less than 30 minutes!
• 500g of turkey fillets
• 1 ½ cups of fresh chopped broccoli stalks and florets
• 2 cups of fresh,sliced mushrooms
• 1 red bell pepper,cut into strips
• 1 teaspoon salt
• 2 tablespoons extra virgin olive oil
• 3 tablespoons white wine
Preparation time: 30 minutes
Instructions: put ½ teaspoon salt over turkey. Heat 1 tablespoon olive oil in a large skillet pan, then add the turkey fillets and cook them for 5 minutes on each side or until browned. After, remove them to a plate,add the remaining oil,add the mushrooms,red bell pepper and the remaining salt. Cover and cook for 10 minutes, stirring often,then add the wine,cook for other 10 minutes and at the end add the broccoli and turkey. Reduce the heat and cook for 3- 5 minutes, stirring occasionally!
Serve warm with a glass of Chardonnay!
No bake–lemon nuts cookies
Great choice for those who don’t have time to bake or simply…. don’t want to do that!
• 1 cup unsalted raw mixed nuts ( almonds, hazelnuts, walnuts, pistachios)
• 1 cup coconut flour
• ½ cup almond butter creamy
• ½ cup honey
• 1 tablespoon grated lemon or orange
Preparation time: 15 minutes
Instructions: put the mixed nuts in a blender or food processor and grind up. After,grate the lemon or orange,in a way to form a zest. Transfer these ingredients in a large bowl,add the flour first,mix well with fork and next add the butter, honey and little cinnamon. Mix everything well(you can use your hands or fork), until you get a soft, smooth and not to much sticky mixture. Depending on your almond butter and coconut flour, maybe you’ll have to add more honey or almond butter! At the end,roll into a small balls and put in a freezer to harden. If you like you can coat the cookies-balls with coconut sugar or extra lemon- orange zest!
As you can see, you can prepare healthy and delicious meals quickly and cheap!
