Ginger and carrot cream soup recipe:
Great idea for those who like ginger and carrots and for anyone who wants to try something new! It’s healthy, tasty and easy to prepare…all you need is:
• 1 tablespoon of butter or olive oil.
• 5-6 big carrots.
• 1 large onion, diced.
• 1 piece of fresh ginger (size of your thumb).
• 1 tablespoon of apple vinegar.
• 1 cup of fresh chopped parsley.
• salt and pepper to taste.
Peel the carrots and ginger, chop on small pieces and put them into a blender or you can also choose to grate these two ingredients.
In a large soup pot add the butter or the olive oil and over medium heat start the cooking of the onion until become a little soft. Add the blended or grated ginger-carrot and stir for couple of minutes. Next add the apple vinegar, the salt and pepper and pour in water enough to cover the vegetables. Cook this for 20-30 minutes and then add the chopped parsley and cook for 2 minutes more. If the soup is too thick add more water and cook until boils.

Ginger soup with coconut milk recipe:
Another tasty and delicious cream soup recipe that you will just love it!
• one bigger piece of ginger root ( peeled and grated).
• 1 grated lime zest.
• 3-4 cloves of minced garlic.
• half of chopped chili pepper.
• 1 tablespoon of coconut oil.
• ½ can of coconut milk.
• salt, pepper and dry spices to taste.
Heat the coconut oil in a large saucepan over medium heat and then add the grated ginger and chopped chili pepper. Stir for few minutes and then add the minced garlic. This time don’t stir to much because the garlic will burn, just add the coconut milk fast and cook until the milk begin to boil. Add 4 cups of water and let it boil again, cook for 5 minutes and at the end just add the salt and pepper and some dried spices like: dried basil, dried marjoram or dried thyme. Remove from heat and let it cool slightly.
Serve with chopped coriander leaves!
Ginger Chicken soup recipe:
For Sunday lunch or dinner, feel the taste of home!
• 1 large onion, peeled.
• 5-6 slices of peeled ginger.
• 4 – pound whole chicken cut in pieces.
• 2 big carrots chopped in bigger pieces.
• Coriander ( cilantro) leaves, chopped.
• 2 tablespoons of soy sauce.
• ½ cup soup pasta (stars or pastina).
• 1 lemon zest.
• salt and pepper.
In a large heavy pot, put the chicken, carrots, the whole onion and ginger slices. Add two quarts or more of water and bring to a boil over medium heat. Cook until the chicken become soft, around 30 minutes, and after transfer the chicken to a plate, let it cool and then shred the meat. In meanwhile put the cooked carrots, onion and ginger into a blender, add the soy sauce and little water and blend everything. Then return the meat and the blended ingredients to soup, let it boil again, add the pasta and cook for 5 minutes more, do not overcook it, and before removing from the heat, add the chopped cilantro leaves and lemon zest, salt and pepper by taste.
